We're rounding out the final weeks of our fall community-supported agriculture (CSA) program, and this week, we were gifted cauliflower! And with temps dropping here in Charlotte, you bet I've got lots of comfort foods on our unprocessed menu this week. Be sure to check out the Recipes page for details on what our crew will dine on.
Our house has been a flurry of illness in the last three weeks. While one child is home sick today, I feel like this will be the most "normal" of all the weeks since I left my corporate job one month ago. I hope it's not just wishful thinking lol. With all that said, what's on the dinner menu this week? Given the chilly weather here in the southeast, I'm feeling vegetarian shepherd's pie, soup, pasta dishes, and lots of salad because lettuce (see above) lol.
For the Shepherd's Pie, the recipe calls for turnips and potatoes, and lentils instead of ground beef. I'm curious if the kids will eat this, so I'll prepare rice and extra lentils for them to eat, just in case. I have tons of carrots still on hand and I'll throw in other veggies I find in the fridge.
If you couldn't tell, l I'm obsessed with broccoli and cheese soup. It's savory and delicious on a chilly day, and I love to soak up the bottom of the bowl with fresh bread. The kids don't love the soup, but they do love steamed broccoli so that'll definitely be on the menu this week.
I'm also going to try out a cauliflower tot recipe. I'm not one to disguise vegetables into tot shapes so my kids will eat them, but this one looks tasty and I'm also curious what they'll think. Winter is coming and I'm guessing more cauliflower will be in our future.
In addition to having a ton of butternut squash, I also have a surplus of sweet potatoes. I'll cube up a couple and roast them for a sweet potato hash. For the kids, I'll simply boil the potatoes and serve them in a bowl. They love it and always ask for more, and could it be any easier? When my mom was visiting last month, she thought it was super weird that they just ate a sweet potato for dinner which reminds me how conditioned we are to believe what a complete meal "should" look like. I'm all for thinking outside the traditional protein, starch, and veggie plate.
Lastly, a super garlicky pasta will round out our week. I'll keep some plain pasta on the side for the kiddos and throw a few veggies on the plate as well.
